Grilled Veggies on a Skewer

Make some Veggie Kabobs, a great way to enjoy a BBQ with your friends. And look, if you have room on the grill add some asparagus and drizzle with olive oil and seasoning! I love this meal.

Cut up all your favorite veggies, put them on a skewer and then pop them on the grill for a few minutes to warm them up and give them the ‘grilled’ flavor. Here is my basic recipe!

Veggie Kabobs / Grilled Veggies on a Skewer
Ingredients
Yellow, Red & Orange Peppers cut int 1″ pieces
Medium Zuccini – Slice length wise in 1/2 the cut into 1″ pieces
Medium Yellow Squash – Slice length wise in 1/2 the cut into 1″ pieces
Butternut Squash – peal & clean out inside then cut into 1″ pieces
Broccoli Florrets – cut into 1 ” pieces
Red Onions – Cut into 2″ chunks
Baby Carrots or Cut Full size carrots into 1″ pieces

Place all of the veggies in a large bowl except onion. Drizzle with olive oil and season with salt, herbs, pepper, and garlic. With your hands, toss to combine well. Stick onion pieces in last with the vegetables to coat with the marinade; avoid tossing once onion is added so that the onion does not fall apart.

Place on grill on medium heat or fire… enough so that the veggies can be warmed but not burned. Turn frequently. Remember, the less you cook them, the more nutritional value they will give you!

Serve with tossed Mixed Green Salad or Spinach Salad, Corn (RAW, grilled, or boiled) or check out the fantastic RAW moch potato salads , mashed sweet potato salad and other picnic type foods. You will be surprised at the many recipes available to fill you plate for a delicious and nutritious meal or party!
